HOW WE WORK

We work with sustainable viticulture, respecting the environment and territory without compromising with the market. This results in the production of very high quality grapes that allow us to make signature wines unique in the world.

PROCESSING CRITERIA

•  In January we start pruning using hand pruning shears which guarantee a clean cut and a better healing of the spur.

• Vineyard work is managed according to the needs of the vines

• Three phases of green pruning are carried out. This guarantees a low yield of grapes correct for the objective to be reached: the high quality of our wines.

All grapes are harvested by hand.

ASSEMBLY
WINES

The blending of Imperiale Bolgheri wines is unique: a single cut, before bottling.

Le barriques Our casks are for the most part French. Only 10% are American – which softens the tannin, and Hungarian – hard wood that transmits less to the wine and therefore enhances the fruity aroma.

VARIETY OF GRAPES

HECTARES OF LAND

THE STORY OF A CHANGE

“In the changing of the seasons, the earth tells us stories of the wind, the rain, stones and roots, and the true farmer is he who knows how to listen to them.”
Fabrizio Caramagna

The first vineyards were planted by Enio Frollani, one of the first to believe in the potential of the Bolgheri area, so much so that he was among the founding members of Doc Bolgheri.

During the meetings that preceded the founding of the Doc consortium, Enio became interested in the world of international grape varieties, to the point of selecting the most suitable soils for planting Cabernet Franc, Cabernet Sauvignon and Merlot vines, in order to begin production.

The chosen soil is clayey-loam containing gravel and skeleton;
this mixture contributes to making our wines unique.

Today Matteo Frollani continues this family history but giving a completely new aspect to his company, employing more ecological methods than those used in the past and innovative tools with an extremely positive impact on production.

Health and respect for the earth are the  values on which the company bases its work;
values that emerge in the refinement and quality of its products.

BETWEEN THE OLD AND NEW GENERATIONS

“My grandparents come from  Le Marche like many here. My great-grandfather moved here from that region when sharecropping was still in practice. Soon all the people who moved here from Le Marche realized that the processing techniques in their region were superior and more advanced than those in Tuscany. Accustomed to the hills and the lack of water, here they found plains, lots of water, and fertile land.

EVO OIL AND HONEY
ANCIENT AND MODERN GRAINS

 Matteo then came up with the idea of planting ancient and modern grains and extracting flour to make pasta:
He has managed to patent new methods for traditional products, such as barrel-honey.
