OUR WORK METHOD
We rely on sustainable viticulture that respects the environment and the land without compromising with the market. This leads us to obtain very high quality grapes that allow us to make unique signature wines.
PROCESSING Criteria
- In January we start pruning using hand pruning shears to ensure a clean cut and better healing of the spur
- Work in the vineyard is managed according to the needs of the plants
- Three passages of green pruning are carried out to ensure a low grape yield that is correct for the objective to be achieved: the high quality of our wines
- All grapes are harvested by hand
WINE
ASSEMBLY
The blend of Imperiale Bolgheri wines is unique: a single cut, before bottling.
The barriques used are mostly French. Only 10% is American – soft that dampens the tannin – and Hungarian – hard wood that transmits less to the wine and thus enhances the fruitiness.

The desire to expand our reality and make the quality of our wines and the excellence of Tuscan products better known, led us to open a wine shop-restaurant in 2023, where our guests can enjoy all the taste and beauty of our land, between Bolgheri and Castagneto Carducci in Tuscany. We offer a wide selection of Tuscan wines, Bolgheri wines and French wines.

During the meetings preceding the founding of the DOC consortium, Enio became so passionate about the world of international grape varieties that he
to the point of selecting among his soils those most suitable for planting Cabernet Franc, Cabernet Sauvignon and Merlot vines, to begin production.
The chosen soil is loamy-clayey containing gravel and skeleton;
this mixture contributes to making our wines unique.
Today, Matteo Frollani, continues this long family history with the intention of giving a completely new imprint to his company, using more ecological methods than those used in the past and innovative tools that have a particularly positive influence on production.
Healthiness and respect for the earth, the values on which the company bases its work;
values that emerge in the refinement and quality of the products.
BETWEEN OLD AND NEW GENERATION
My grandparents are from the Marches, like many here. My great-grandfather left there, where there was sharecropping, and came here. Soon all the people from the Marche who had moved here realised that the processing techniques of their home region were superior, more advanced, than those of Tuscany.
Used to hills and lack of water, they found plains, plenty of water, and fertile land.
